Study unveils health qualities of maple syrup

Thursday, 31 March 2011 7:40 PM

A new study from the University of Rhode Island has unravelled the health benefits of pure maple syrup from Quebec.

The research – unveiled today at the American Chemical Society's National Meeting – discovered 34 new compounds that can have a positive health impact, as well as confirming 20 more that were discovered in a similar study last year.

Incredibly, five of the compounds the study discovered have never been observed in nature before.

Commenting on the research findings, author of the study, Navindra Seeram, said: "I continue to say that nature is the best chemist, and that maple syrup is becoming a champion food when it comes to the number and variety of beneficial compounds found in it.”

"It's important to note that in our laboratory research we found that several of these compounds possess anti-oxidant and anti-inflammatory properties, which have been shown to fight cancer, diabetes and bacterial illnesses."
